The mistake buyers make

Trusting insulation to do what ice does. Insulation slows heat; it doesn't make cold. A bag with no ice pack is a bag at room temperature by the second break, and the USDA's rule is that perishable food gets two hours above 40°F before it becomes unsafe, one hour if the room is over 90°F.
