How to reheat meal prep: 165°F, medium power, a splash of water, and the right lid rule
Reheating is where good meal prep becomes rubbery chicken and hard rice. The fix is three habits — medium power, added moisture, a vented cover — and knowing which container lids the maker lets you leave on. Here is the method by container and by starting temperature.

The target: 165°F
Microwave: the three habits
- Medium power, longer. Full power cooks the outside a second time before the inside is warm. Half power for twice the time heats it through without the rubber.
- Add water. A tablespoon over rice, a teaspoon over sliced chicken; the steam does what the fridge undid. Chili and stews don't need it.
- Vent, don't seal. A vented lid or a damp paper towel keeps the steam in the container and the splatter off the microwave. A sealed lid builds pressure and warps.

From frozen
Thaw in the fridge overnight if you can; it reheats evenly and the USDA's fridge clock (3 to 4 days) starts again from the thaw. Straight from frozen: medium power, a splash of water, stir every couple of minutes, thermometer at the end. A frozen block of chili reheats faster and more evenly than a frozen slab in a rectangle, which is one more argument for the tray on the freezing page. Never a frozen glass container into a hot oven — the glass rules.
Oven and toaster oven
For anything you want crisp again — roasted vegetables, a chicken thigh — the oven at 350°F for fifteen minutes beats the microwave. No microwave
