How to freeze meal prep without freezer burn: cool, portion, block, bag, label

Freezer burn is air. The method that beats it is five steps and one habit: cool the batch fast and shallow, freeze it as portion-sized blocks, bag the blocks with the air pressed out, write the date, and thaw in the fridge. Here is each step, with the reason.

What freezer burn is

Ice on the food sublimating into the air in the package and refreezing on the inside of the bag as frost; the dry gray patch is where the water left. It's a quality problem — the USDA says food constantly at 0°F is always safe — and it's driven by three things: air in the package, surface area exposed to it, and time. The method below attacks all three. The FDA's time windows, which are the "how long" side of this, are on how long meal prep lasts in the freezer.

1. Cool fast and shallow

A half sheet pan is the tool — Nordic Ware's is 17.1 × 12.1 inches and an inch deep, which is a lot of surface. Spread, wait until it stops steaming, then portion.

2. Portion into a tray

Souper Cubes' 1-cup tray has four wells with fill lines at ½ and 1 cup (125 and 250 mL) and a steel frame, so it carries flat and every block is the same portion. Chili, curry, shredded chicken in its liquid, cooked rice, soup — anything that ladles. Fill to the line, lid on. Two trays freeze eight portions a night; the tray goes back into service the next day.

3. Freeze flat, then pop

Trays flat in the freezer overnight; the maker says up to 24 hours for most foods to freeze solid. Then flex the tray and the blocks pop out. A solid block has one thing a bag of loose chili doesn't: a small surface relative to its volume, with no pockets of air inside it.

4. Bag with the air out

Blocks into a bag, and the air out. Reusable silicone (Stasher: press out the air, pinch the full length of the seal) or a zip bag pressed flat. Or the vacuum sealer, which removes nearly all of it — and because the blocks are frozen, no liquid reaches the seal strip, which is the workaround for sealers without a moist mode. Freeze the chicken in its sauce, not dry: the FDA's chart gives poultry in broth or gravy 6 months against 4 for plain pieces, because the liquid is a barrier.

5. Label and rotate

Contents and date on every bag. Newest to the back, oldest to the front. The FDA windows for cooked meals run 2 to 6 months; a labeled freezer is one where you eat the January chili in March instead of finding it in September.

Thawing

Fridge, overnight. A block moved to the fridge Wednesday night is a lunch Thursday. Thawed cooked food is back on the USDA's 3-to-4-day fridge clock and shouldn't be refrozen. Cool it first — within 2 hours, shallow, per the USDA. Hot food in the freezer forms large ice crystals and warms what's next to it.

What causes freezer burn?

Moisture leaving the food into air in the package. Less air (pressed-flat bags, vacuum), less surface (solid blocks), less time (labels and rotation).

Is freezer-burned food safe?

Per the USDA, food kept at 0°F is safe indefinitely; freezer burn is a quality loss. Cut the dry patch off and use the rest.

Do I need a vacuum sealer to avoid freezer burn?

No. Blocks in a pressed-flat bag reach the FDA's windows for cooked food fine. The sealer matters for raw protein kept 6–12 months.
