How to meal prep rice: cook it once, cool it fast, and it's good all week

Rice goes wrong two ways — it dries hard in the fridge, or it sits warm too long after cooking. The fix for both is the same cool-and-portion routine. Here it is, with the ratio, the cooker, the freezer trick, and the reheat that brings day-four rice back.

Cook: rinse, ratio, cooker

Rinse white rice until the water runs mostly clear; it takes the surface starch off and the grains stay separate in a container instead of setting into a block. Use the cooker's own cup and its own water line — a micom cooker like the Zojirushi adjusts the cycle by rice type (its menus run white, brown, mixed, porridge and more), and the line in the pan is calibrated to its cup, not to a measuring cup. On a stove, the usual starting point is 1 part rice to 1.5 parts water for white and closer to 2 for brown, covered, low, then off the heat to rest. Cool: the step that matters most

Keep-warm is for the hour it takes to plate dinner and fill the containers. It is not a storage setting. If you can't portion until later, portion first and eat later.

Portion and store

A cup of cooked rice per lunch is the usual carb portion (about 150–200 g depending on how it's packed — weigh it once if you track; the raw-or-cooked page has the batch-weigh method). Into a sealed container with the protein and vegetable, or into its own so the sauce goes on at reheat. A latched, gasketed lid (Glasslock) keeps the rice from drying, which is the texture half of the problem. Three to four days in the fridge, per the USDA — cook Sunday, eat through Wednesday.

Freeze the back half of the week

Rice freezes well and reheats from frozen better than it reheats from day-four-in-the-fridge. Portion the cooled rice into a silicone tray (Souper Cubes' 1-cup wells are exactly a portion), freeze, pop the blocks into a bag with the air pressed out. Reheat so it isn't hard

Rice dries in the fridge — the starch sets and the grains lose water — and the fix is to give the water back. A tablespoon of water over a cup of rice, a vented lid or a damp paper towel, medium power, and a stir halfway. From frozen: the same, on medium, a minute longer. The USDA's reheat target for leftovers is 165°F at the center. Treat it as cooked leftovers under the USDA's rule: 3 to 4 days at 40°F or below, cooled within 2 hours of cooking.

Is it safe to reheat rice?

Yes, if it was cooled within 2 hours and refrigerated, and it's reheated to 165°F. The risk is rice held warm for hours before the fridge, not the reheating.

Why is my meal prep rice hard?

It dried in the fridge. Reheat with a tablespoon of water under a vented lid; use a gasketed container; freeze the back half of the week.

Can you freeze cooked rice?
