How to bulk cook chicken breast: three methods, one safety rule, and the batch-weigh trick
Two pounds of chicken breast for the week, cooked one of three ways depending on whether you want it roasted, shredded or seared — all to the USDA's 165°F, all cooled within 2 hours, all good for 3 to 4 days or frozen in its sauce for longer.

Why bulk chicken dries out
Breast is lean, and every degree past done costs it water. Cooked to 165°F and pulled immediately it's moist on Monday and acceptable Thursday; cooked to 185°F because "it's chicken" it's dry on Monday. The second cause is the reheat: a slice of breast in a microwave on high for three minutes has been cooked twice. Both are fixable — a thermometer for the first, water and medium power for the second (on how to reheat meal prep) — and both are why thighs are the more forgiving bulk cut if the macros allow it.

Times and temperatures are usual starting points, not tested figures; the thermometer decides doneness.
For a week of containers the sheet pan wins on volume and attention: two sheets, one oven, nothing to stir. The pressure cooker wins for anything that will be frozen — shredded chicken in broth is the FDA's "pieces covered with broth, gravy" row, at 6 months of quality against 4 for plain. Cool, store, freeze
Within 2 hours, per the USDA, and shallow: the sheet pan the chicken roasted on is the cooling tray. Slice once cool enough to handle, into containers, into the fridge — 3 to 4 days at 40°F for cooked poultry. Freeze the rest: the FDA's chart gives plain cooked pieces 4 months and pieces in broth or gravy 6 months for quality, so freeze shredded chicken in its liquid and roasted pieces with a spoon of sauce. Weigh the batch twice
If you track macros: weigh the raw chicken before it goes in (say 1,000 g), weigh the cooked batch after it cools (say 740 g), and every cooked gram is 1,000 ÷ 740 of a raw gram — divide the cooked batch into five and log each container as 200 g raw.
