Why the sheet pan wins
Batch capacity and hands-off cooking are 50 points of the rubric, and a half sheet has both. Two pounds of chicken thighs and a tray of cut vegetables fit on one; two sheets fit side by side in most ovens; and once they're in there is nothing to do for 35 minutes but portion containers. A skillet cooks in batches of one pound and needs a hand on it the whole time. Nordic Ware's Naturals half sheet is the reference because it prints the specs that matter: interior dimensions, an encapsulated steel rim "that adds strength and prevents warping", oven safe to 500°F and broiler safe, and a lifetime warranty. Hand wash — the maker says so, to keep the bare aluminum finish.
Material by job
Aluminum sheet (Nordic Ware): roasting, sheet-pan dinners, cooling a batch fast before it's portioned (the USDA's shallow-container advice, applied). Not for the stovetop.
Cast iron (Lodge 12-inch): searing. The maker rates it for "any stovetop (including induction), oven, grill, or campfire", seasoned with vegetable oil, made in the USA, without PFAS. 7.69 lb — heavy to tip into a container — and hand wash, dry, oil. Acidic sauces strip young seasoning.
Enameled cast iron (Lodge 6-quart): chili, curry, braises, anything with tomato or citrus. The maker says the porcelain enamel "can stand up to acidic ingredients, marinate foods, and even store leftovers in the fridge" — cook, cool and refrigerate in one pot. Six quarts is two weeks of chili.
Tri-ply stainless (All-Clad D3 12-inch): browning without a coating to protect, at 3 lb, oven and broiler safe to 600°F, induction, made in Pennsylvania, limited lifetime warranty. Handwash only per the maker. Stainless sticks until it's properly hot; it rewards a preheated pan and punishes a cold one.

Buyer's guide: the order to buy them in
- Two half sheets. Roasting is the highest-volume, lowest-attention cooking there is.
- The enameled pot, if you eat chili, curry or stew weekly — it's the batch that freezes best.
- The cast iron, for the sear a sheet pan can't give a steak or a thigh.
- The stainless, when the cast iron's weight or acid limits start to bother you.
The cookers that do the same jobs unattended — a slow cooker for the pot's work, a rice cooker for the carb — are on best slow cooker and best rice cooker.

Plenty of sites say they packed every container on the list for a week. We didn't, and we say so. What we do instead: read the lid, material and care ratings the maker actually publishes and repeat its wording ("leak-proof", "oven safe to 450°F", "top-rack only"), do the container-fit and ice-pack arithmetic from published dimensions and the USDA's numbers, and score every pick on a public rubric for its category that weights the seal, the material and the fit first. Every figure links to where it came from; where the maker's page would not load we cite a retailer and say so.
Scores are editorial judgments from that documented research, not test results. Commissions never set a score or decide a pick. The rubrics and their weights are published.

What size pan for meal prep?
A half sheet (about 18 × 13 in outside, 17.1 × 12.1 in inside on the Nordic Ware) is the largest that fits a home oven, and two fit side by side in most. For skillets, 12 inches.
Is cast iron good for meal prep?
For searing, yes — any heat source, no coating. It's heavy (Lodge prints 7.69 lb for the 12-inch), hand-wash only, and not for acidic sauces until the seasoning is mature.
Can I put a sheet pan in the dishwasher?
Nordic Ware says hand wash to preserve the natural aluminum finish; a dishwasher discolors it.
