The meal-prep case
Load it before work, come home to two weeks of chili. That is the whole argument, and it depends on three features the makers print: a programmable timer long enough for a workday, an automatic shift to warm when the time is up (so the food isn't cooking for the extra two hours you were stuck in traffic), and a capacity big enough that one run is worth the cleanup. Seven quarts is that capacity — Crock-Pot prints "cooks meals for 9+ people" — and it is why the 7-quart leads the 6-quart on batch capacity, which the rubric weights at 30.

The probe is the Hamilton Beach's reason to exist: set 165°F for a whole chicken, and the cooker shifts to warm when the meat gets there instead of when a clock does. For a pot of chili it's irrelevant. The Instant Pot's slow-cook mode is a real slow cooker with a 10-hour keep-warm, plus a pressure cooker that does the same chili in under an hour if you forgot to load it — the argument is on slow cooker vs Instant Pot.

Six or seven quarts?
Seven for batch cooking; six is a family dinner. The difference is a week of lunches in the freezer.
Does the lid lock?
Crock-Pot's Cook & Carry and Hamilton Beach's clip-tight lid both do; that's what lets the whole pot ride to a potluck or a second kitchen. The Instant Pot's lid seals for pressure, not for the car.
Sear first?
A slow cooker can't brown. Sear in the skillet from the pans page, or use the Instant Pot's sauté mode and skip the second pan.

That's the design: Crock-Pot prints a 20-hour programmable range and Hamilton Beach 24 hours, both shifting to warm when done. Portion and refrigerate within 2 hours of the cycle ending.
Is a slow cooker or Instant Pot better for meal prep?
