When a sealer earns its counter

When you buy protein in bulk and freeze it for months. Freezer burn is moisture leaving the food into the air in the package, and a vacuum bag has almost none — which is why the FDA's chart puts raw chicken parts at 9 months and steaks at 6 to 12 months for quality, and why a sealed chicken breast from March is still a chicken breast in August. Bag width decides what you can seal in one bag: 11–11.8 inches takes a whole chicken breast flat or a pound of ground beef pressed thin. A cutter and roll storage decide how annoying a Sunday is — cutting bags with scissors from a loose roll gets old by the fifth. The seal-count rating (Anova prints "over 100 continuous vacuum seals") is the spec for a batch day; cheaper sealers overheat and pause.

How often?

Monthly bulk buys: NESCO or Anova. Twice a month: the FM2000. Weekly chili: no machine — Stasher or a zip bag with the air pressed out, and the freezer workflow on best freezer containers.

How much counter?

NESCO is 17 inches wide and 10 lb; it lives out or in a deep cabinet. Anova and FoodSaver are 15–16 inches and lighter. None of them is small.

Sous vide?

Any of them seals a sous-vide bag; Anova is the sous-vide brand and its sealer is built for that volume.

How Meal & Macro scores gear

Plenty of sites say they packed every container on the list for a week. We didn't, and we say so. What we do instead: read the lid, material and care ratings the maker actually publishes and repeat its wording ("leak-proof", "oven safe to 450°F", "top-rack only"), do the container-fit and ice-pack arithmetic from published dimensions and the USDA's numbers, and score every pick on a public rubric for its category that weights the seal, the material and the fit first. Every figure links to where it came from; where the maker's page would not load we cite a retailer and say so.

Frequently asked

Do you need a moist mode on a vacuum sealer?

If you seal anything with liquid — marinades, cooked food, chili — yes. NESCO and Anova print one; freeze wet food solid first on a sealer without it.

How long does vacuum-sealed food last in the freezer?

Safe indefinitely at 0°F per the FDA; the quality windows are the chart's (raw chicken parts 9 months, steaks 6–12). Vacuum sealing keeps the food at the long end of those ranges by removing the air that causes freezer burn.

Is a vacuum sealer worth it for meal prep?

For monthly bulk protein, yes. For a week of cooked meals, a tray and bags do the same job without the machine.
