The four specs that matter

A baking scale is a different instrument from a macro scale, and the difference is not precision. It is these four, in this order:

  • A gram graduation. Every published bread, cake and pastry formula is in grams, and every scale on this page reads in 1 g steps. That is the floor, and it is also the ceiling for almost all baking.
  • Capacity for a full bowl. A stand-mixer bowl weighs 2 to 3 lb empty. Add 1,000 g of flour and water and an 11 lb scale is comfortable; a 5 kg scale is close to its limit.
  • A tare that takes repeated hits. Baking is additive: bowl, tare, flour, tare, water, tare, salt. A scale that drifts or auto-zeroes badly ruins the sequence.
  • A readable display. This is the one nobody checks in the shop, and the one that makes a scale annoying every single time. A wide bowl sits over the display on most flat scales.

Why 1 g is enough, and when it is not

Every scale here reads to 1 g and none reads to 0.1 g, and for baking that is the right instrument. Run the numbers on a standard loaf: 500 g flour, 350 g water, 10 g salt, 7 g instant yeast. A 1 g error on the salt is 0.2% of the flour weight — well inside the variation between two bags of flour. The recipes that genuinely need 0.1 g are espresso dosing and very small sourdough starters, and that is a jeweler's scale rather than a kitchen one.

What does matter is the unit set. Baker's percentages need grams and nothing else; American recipes need ounces; bread hydration is easier in milliliters. The Ozeri publishes six units, the Luminary five including separate water and milk volumes, the OXO converts US to metric with one button.

The bowl-shadow problem

Put a 9-inch mixing bowl on a scale whose display sits on the platform and you cannot read the number. That is not a quibble; it is the single most common reason a kitchen scale ends up unused, and there are exactly two engineering answers to it. OXO's is mechanical: the display slides out on an arm, clear of the bowl. Greater Goods' is optical: a backlit screen bright enough to read in the bowl's shadow. Etekcity's EK4150 sidesteps it a third way by putting the bowl beside the readout rather than on top of it.

The three flat scales here — Luminary, ZK14, EK6015 — all put the display on the platform edge, and all of them need you to lean over or use a narrower bowl. The Ozeri at least moves its buttons off the weighing deck so a heavy bowl does not make the reading flicker, which is a related problem and one its page names directly.

Tare, auto-off and the bake that fails

Auto-off is the specification that ruins bakes. A scale that sleeps after 120 seconds — the EK6015 and the EK4150 — will switch off while you are cutting butter or waiting for a kettle, and it takes the tare with it. Then you either start again or guess. The Ozeri publishes a programmable 2-to-5-minute setting and the Luminary stretches to 300 seconds in its app; those are the two that survive a slow mise en place.

One more thing baking does to a scale that macro tracking does not: it covers it in flour. The OXO's platform lifts off and goes in the sink, and Greater Goods uses glass that wipes. A sealed button panel — the plain scales here — survives a spill better than a membrane with gaps around the keys.

Buyer's guide: three questions

Do you bake in a stand-mixer bowl?

Then capacity and the display both matter: the OXO's pull-out arm, or the Luminary's 22 lb if the bowl itself is heavy. An 11 lb scale with a 3 lb bowl leaves 8 lb of ingredients, which is plenty for one loaf and tight for a double batch.

Do you want the bowl included?

The EK4150 ships a 2.06 qt stainless bowl that detaches and washes, plus a 99-minute timer — useful for a proof or a bake. The trade is counter and cupboard space.

Is it also your macro scale?

Then buy a nutrition scale rather than a baking one and accept a smaller platform. The scales that do the nutrition arithmetic themselves are on best food scales with a nutritional calculator, and the cheapest way in is on best food scales under $20.

Frequently asked

Do you need a 0.1 g scale for baking?

No. Bread, cake and pastry formulas work in whole grams: 10 g of salt against 500 g of flour means a 1 g error is 0.2% of the flour weight. Sub-gram precision is for espresso dosing and tiny starter builds, which is a different instrument.

What capacity food scale do I need for bread?

11 lb covers a single loaf comfortably — a 3 lb mixer bowl plus about 1,000 g of flour and water. Go to 22 lb if you mix double batches or use a heavy ceramic bowl.

Why can't I read my kitchen scale when a bowl is on it?

Because the display is on the weighing platform and the bowl is wider than the scale. The two fixes are a pull-out display (OXO) or a backlit screen (Greater Goods); a bowl-on-the-side design like the EK4150 avoids it entirely.

Does auto-off matter on a baking scale?

More than anything except the display. A 120-second auto-off will sleep mid-recipe and take your tare with it. Look for a programmable setting — the Ozeri publishes 2 to 5 minutes, the Etekcity Luminary up to 300 seconds.
